Pineapple...evoking the remembrance of the Hawaiian Islands and balmy weather. This wine is great for sipping when very well chilled. Also excellent for dressing a fruit salad and makes a lovely vinaigrette. However, one of my absolute favorite uses for this wine is ham glaze. YUM!! So easy but makes your holiday (or anytime) ham special! This glaze can be used with all types of pork dishes and also is great for a sweet & sour sauce.
Pineapple Ham Glaze
Ham - approximately 6 pounds, fully cooked2 Cups Mill Lane Winery
Pineapple Wine4 Tablespoons Butter3/4 Cup Brown SugarPineapple Slices (I like
fresh but you can use canned) - About a dozen slices1 Jar Maraschino
Place ham in roasting pan.
In sauce pan over medium heat, combine Pineapple Wine, butter and brown sugar. Bring to a boil and then reduce heat to simmer until thickened (about 10-15 minutes).
Brush glaze over entire ham.
Using toothpicks to secure, arrange pineapple slices over the ham. Add one cherry in the middle of each pineapple slice, securing with toothpick.
Lightly coat the pineapple rings with glaze.
Heat ham according to package directions, brushing with additional glaze every 30 minutes.
