T'd Up White Wine Batter

T'd Up was our 'mistake' wine. And from my mistake came this lovely wine! :) Leave it to Dan to fix my boo-boo! This wine is a blend of 3 white California grapes: Riesling, Muscat and Sauv Blanc, to which we have added green apples. Perfectly paired with seafood, chicken, salads and I'm told it's excellent with Salmon. (For those of you that know me...salmon is one of my most disliked foods!)  I like to use this wine when cooking anything with pork. The apple gives a great flavor to your pork dishes as they are roasting, baking or cooking on top of the stove. I also LOVE to brush this on seafood while it's cooking. T'd Up White Wine Batter

1/4 Cup Mill Lane Winery T'd Up White Wine
1 Egg, separated
1/4 Cup Flour for batter and another 1/4 Cup Flour for dredging
1/4 Teaspoon Baking Powder
1/4 Teaspoon Salt
1/4 Teaspoon Pepper

Combine 1/4 cup flour, baking powder and salt; set aside. Combine egg yolk and wine in a separate bowl, mixing well.  Then add wine mixture to the flour mixture, stirring well.  Beat egg white until stiff then fold into batter. Heat oil to desired temperature (depending on what you're frying) Dip food (see below for suggestions) into flour, then batter, then flour again. Fry until lightly browned.
